Corkscrew pasta boiled in crawfish stock topped with a medium-grilled slice of filet mignon, a creamy made-from-scratch cheese sauce and hand-selected spicy fresh crawfish tails.
This drool-worthy dish (concocted by the Jefferson Financial Federal Credit Union boil team) delighted the taste buds of the judges of the 8th Annual Crawfish Mambo and was named best dish at the University of New Orleans Alumni Association event on May 11.
The team, headed by consumer lender Zach Vandergriff, also took first place overall for their batch of crawfish, which were judged on flavor, spice and creativity.
