In Italy, dining (not merely eating) is an experience enjoyed daily, not something reserved only for special occasions. This notion of experiential dining is the fundamental idea behind Meribo, a new modern Italian restaurant in downtown Covington.
With innovative wood-fired pizzas made with local ingredients, house-made pastas and “small-ish” dishes meant for sharing, we hope our guests can pop a bottle of prosecco or indulge in a Celestine Spritz and celebrate the everyday. It’s a concept derived from both Italian culture and from our Southern roots that is beginning to influence the cultural scene on the Northshore.
