It’s a common saying that the best months to enjoy oysters are “r” months: January, February, March, April, September, October, November and December.
Whether you’re enjoying them on the half shell, deep fried on a po’boy or in holiday dressing, oysters are a delicious delicacy. However, mastering the subtle balance of a not-too-fresh and not-too-salty environment in which oysters can thrive is a tricky business.
On our constantly changing coast, it’s hard to find the perfect equilibrium. The Lake Pontchartrain Basin Foundation identified areas that are just right for oysters in its Oyster Habitat Suitability Report.
